Imperfections make you, you....

Who are you?  Molly

Who am I?  I am me.

What makes you, you?  The people I love, the things I believe in, the way I live my life.

What imperfections do you have?  I am stubborn to the limit (just ask my husband), I snore, I feel as though I need to plan out my whole life (tried, can't be done), I sometimes give up to easily, I want everything to be perfect, but it will never be that way, and you know what....I think I am beginning to be ok with that.

Sometimes we strive so hard for perfection, that we forget that imperfection is happiness.

Three question Thursday

Hi!  I missed putting a recipe up yesterday, and I think that is ok...watch for next weeks!!

Random thoughts for Thursday:
  • I love the scent Hazelnut Latte in my Scentsy right now...so yummmy smelling! :)
  • I am going to Cedar Falls tonight to pick up a Stadium Seat...they are those metal and fabric chairs that you set on the bleachers and then sit on...super comfy and awesome for wrestling meets!
  • I bought Dove chocolate yesterday and brought one to work as a treat... here's what the wrapper said..."Live from the heart and love life"...perfect!
  • I don't care for the smell of steamed brocolli, but love the taste of it...
  • I'm listening to Christmas music RIGHT NOW!
Ok ok ok...here's 3 questions:

If you had to move to a different state than what you live in, where would you move?
--Hmmm... this one is hard!  I honestly think I would move to New York.  I LOVED it there...the places, the opportunities, the change, the food, everything was so different, yet so good.  Not sure if I would want to live in NYC, or in the country, but I think I would get used to either...my second choice would probably be Alabama...I loved it when I did a mission trip back in high school and I think it would be amazing to live on the ocean.

What is my biggest fear?
--Losing the most important people in my life.  They make me, me.  I thank God for them everyday.

If you could tell yourself something when you were in high school what would you say?
--Enjoy these moments.  They are never going to come back.  You are a unique and kind person.  It doesn't matter what brand of jeans you are wearing, how late you get to stay out, or if you are popular or not, none of that matters when you get in the real world.  Don't have regrets, follow your heart.  Your parents are trying to do what is right for you, don't fight them so much.  Live for yourself, and be happy.

Thanksgiving

I am thankful for....
  • Jason...he makes me squirt milk out of my nose because he is so dang funny...who wouldn't want to spend their life with their best friend?
  • My mom and dad...they are always there...always...I am blessed to have them as parents.  I love you mom and dad!
  • My siblings...because they bring the best out of me! : )
  • My Mother and Father-in Law...they shared their son with me and welcomed me into the family with open arms.  Thank you for all you have done for us this year, Dick and Kathy.
  • All of the in-law siblings and neice and nephew...Andy, Holly, Bridget, Adam, Justin, Danna, Titus, Cici, I LOVE spending time with all of you as often as I can!  You all mean so much to me, words can't express how blessed I feel when I get to see you guys!! : )
  • Working at a job that I love...
  • Being a coach to a great group of girls who love what they do...and coaching with Kristi who is as driven and passioniate about cheerleading as I am.
  • Where I am today...I am happy, blessed, and thankful....life is better than ever.  I often ask myself how I got so lucky...how the puzzle called life fell into just the right spots to make me so happy.  I couldn't ask to have anything more than that.

Recipe Wednesday-Thanksgiving Style!

Recipe Wednesday
Hello! Happy Thanksgiving a day early to you all! Here's today's recipe...it's my favorite Thanksgiving food!

Pumpkin Pie

1 (8-ounce) package cream cheese, softened

2 cups canned pumpkin, mashed
1 cup sugar
1/4 teaspoon salt
1 egg plus 2 egg yolks, slightly beaten
1 cup half-and-half
1/4 cup (1/2 stick) melted butter
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger, optional
1 piece pre-made pie dough
Whipped cream, for topping

Directions
Preheat the oven to 350 degrees F.

Place 1 piece of pre-made pie dough down into a (9-inch) pie pan and press down along the bottom and all sides. Pinch and crimp the edges together to make a pretty pattern. Put the pie shell back into the freezer for 1 hour to firm up. Fit a piece of aluminum foil to cover the inside of the shell completely. Fill the shell up to the edges with pie weights or dried beans (about 2 pounds) and place it in the oven. Bake for 10 minutes, remove the foil and pie weights and bake for another 10 minutes or until the crust is dried out and beginning to color.

For the filling, in a large mixing bowl, beat the cream cheese with a hand mixer. Add the pumpkin and beat until combined. Add the sugar and salt, and beat until combined. Add the eggs mixed with the yolks, half-and-half, and melted butter, and beat until combined. Finally, add the vanilla, cinnamon, and ginger, if using, and beat until incorporated.

Pour the filling into the warm prepared pie crust and bake for 50 minutes, or until the center is set. Place the pie on a wire rack and cool to room temperature. Cut into slices and top each piece with a generous amount of whipped cream.
