Thanksgiving

I am thankful for....
  • Jason...he makes me squirt milk out of my nose because he is so dang funny...who wouldn't want to spend their life with their best friend?
  • My mom and dad...they are always there...always...I am blessed to have them as parents.  I love you mom and dad!
  • My siblings...because they bring the best out of me! : )
  • My Mother and Father-in Law...they shared their son with me and welcomed me into the family with open arms.  Thank you for all you have done for us this year, Dick and Kathy.
  • All of the in-law siblings and neice and nephew...Andy, Holly, Bridget, Adam, Justin, Danna, Titus, Cici, I LOVE spending time with all of you as often as I can!  You all mean so much to me, words can't express how blessed I feel when I get to see you guys!! : )
  • Working at a job that I love...
  • Being a coach to a great group of girls who love what they do...and coaching with Kristi who is as driven and passioniate about cheerleading as I am.
  • Where I am today...I am happy, blessed, and thankful....life is better than ever.  I often ask myself how I got so lucky...how the puzzle called life fell into just the right spots to make me so happy.  I couldn't ask to have anything more than that.

Recipe Wednesday-Thanksgiving Style!

Recipe Wednesday
Hello! Happy Thanksgiving a day early to you all! Here's today's recipe...it's my favorite Thanksgiving food!

Pumpkin Pie

1 (8-ounce) package cream cheese, softened

2 cups canned pumpkin, mashed
1 cup sugar
1/4 teaspoon salt
1 egg plus 2 egg yolks, slightly beaten
1 cup half-and-half
1/4 cup (1/2 stick) melted butter
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger, optional
1 piece pre-made pie dough
Whipped cream, for topping

Directions
Preheat the oven to 350 degrees F.

Place 1 piece of pre-made pie dough down into a (9-inch) pie pan and press down along the bottom and all sides. Pinch and crimp the edges together to make a pretty pattern. Put the pie shell back into the freezer for 1 hour to firm up. Fit a piece of aluminum foil to cover the inside of the shell completely. Fill the shell up to the edges with pie weights or dried beans (about 2 pounds) and place it in the oven. Bake for 10 minutes, remove the foil and pie weights and bake for another 10 minutes or until the crust is dried out and beginning to color.

For the filling, in a large mixing bowl, beat the cream cheese with a hand mixer. Add the pumpkin and beat until combined. Add the sugar and salt, and beat until combined. Add the eggs mixed with the yolks, half-and-half, and melted butter, and beat until combined. Finally, add the vanilla, cinnamon, and ginger, if using, and beat until incorporated.

Pour the filling into the warm prepared pie crust and bake for 50 minutes, or until the center is set. Place the pie on a wire rack and cool to room temperature. Cut into slices and top each piece with a generous amount of whipped cream.

2010 Living History Farms Race--A MUD RUN!

This past weekend, Jason, Me, and Adam (Jason's Brother), all ran the Living History Farms Race!  It was really cold and muddy, but we had a good time!  We all three had ran this race 4 years ago.  Take a look at some of the pictures of the race the Bridget took! : )
Jason, Me, and Adam gearing up for the race.

The map of the course.  Did I mention it was 7 miles long and 8000 people ran this as well?

Titus and Cici came to watch! : )

Just a little pre race/cheerleading warm up...nothing to special!

Haha!

This dude was CRAZY!  I am literally freezing in what I am wearing in this picture, and all this guy had on was a LOINCLOTH!  He does this race every year barefoot and in the same outfit.  Crazy I tell you!!

Running...

Spotted some tails...

There is Adam in the orange hat!  He was wearing his dad's old running clothes from the 70s!

Look we made it!! I think this was at mile 6 or something like that!

Still smiling! : )

Here come the bananas!!!!!

After the race I was dirty...notice the mud on my face as well... : )
I woke up on Sunday and literally couldn't hardly move!  Every muscle in my body ached...and still does!  Oh well! It was totally worth the experience!!

Let go...

Some of us think holding on makes us strong, but sometimes it is letting go. -Herman Hesse

When I let go of what I am, I become what I might be.  -Lao Tzu
Stand up and walk out of your history.
-Phil McGraw
Breathe.  Let Go.  And remind yourself that this very moment is the only one you know you have for sure. -Oprah Winfrey

Let go and let God...enjoy what you have, embrace the moments you are given.  It's never to late to turn away from the shadows and into the sunshine.  Be yourself.  Be what you believe in.  You are you.  No one can take that away.
------------------------------------------------------------------------------------------

Jason and I are headed down to Des Moines to run the Living History Farms race tomorrow! I'm excited to get on the course, and also excited to spend time with family!  Stay tuned for pictures of the race and from the weekend!
